The cake’s moist and flavorful crumb is achieved through a combination of butter, yogurt, and lime. Ensuring a seamless release from the tin, a simple mixture of flour, vegetable oil, and softened butter is used to coat the baking tin.

To prepare this cake, first create the cake-release mixture by blending 20g each of plain flour, vegetable oil, and softened unsalted butter into a smooth paste. Use this to coat every part of a bundt tin, especially the grooves and edges. The batter begins with zesting six juicy limes, rubbing the zest into 400g of caster sugar to release the oils. This lime-infused sugar is then beaten with 280g of softened unsalted butter to achieve a pale and fluffy texture. Warm five eggs by placing them in hot water for five minutes, then whisk and measure out 250g to add to the batter in three stages, mixing well after each addition.

In a separate bowl, combine 375g of soft plain flour, 2 teaspoons of baking powder, and 1/4 teaspoon of fine sea salt. Gently fold this dry mixture into the wet batter, alternating with 240g of room temperature plain yogurt, ensuring no streaks remain. Transfer the smooth batter into the prepared bundt tin and level the surface. Bake the cake at 170C/150C fan for 60–70 minutes, checking for a clean skewer in the thickest part or a center temperature of approximately 95C.

While the cake bakes, prepare the lime syrup by whisking 250g of fresh lime juice into 300g of icing sugar, starting with half the juice to form a thick paste before adding the rest. Once baked, pierce the cake surface with a skewer and spoon half of the syrup over it, allowing it to soak for ten minutes in the tin. Carefully invert the cake onto a serving plate, make additional holes, and brush with more syrup. Let the cake cool for about 30 minutes before slicing, adding more syrup for an extra-soaked texture if desired.

The lime and yogurt bundt cake can be stored at room temperature for up to three days when covered or frozen for up to three months, making it a versatile treat for any occasion. Its combination of buttery, citrusy flavors and a tender crumb offers a delectable dessert experience, perfect for a refreshing touch to any meal.
